Delicious Tomato Soup

One medium white or yellow onion

6 T. butter

two cans diced tomato.

one 46 oz. tomato juice

3- 6 T sugar

1 or 2 T. of chicken base, or 3 chicken bouillion cubes

Freshly gound black pepper

1 1/2 cups heavy cream

1/4 c. fresh basil

1/3 cup chp[[ed flat leafed parsley

Chopped onion, cook in butter.  Add big can of diced tomatoes with juice. Add 48 oz. bottle tomato juice. 4-6 T. sugar, 1 1/2 c. heavy cream, 3 chicken bouillon cubes, basil, parsley, and pepper to taste.After is all added I let boil so it will reduce.

2- 3 large onions
1 c. sifted flour
1/2 tsp. baking powder
1/2 tsp salt
1 tsp. sugar
3/4 c. milk
1 egg
2 T. oil
Peel onions and slice into 1/4 inch seperate into rings. Sift flour
with baking powder, salt and sugar. combine milk, egg and fat; add to dry ingredients. all at once, and beat until smooth.  Dip onion rings in batter and fry until golden brown in deep fat at 375 degrees. Drain on absorbent paper, sprinkle with salt.

Bread Pudding with Sauce



2 1/2 c. soft or dry bead crumbs- cubes
3 eggs
1/2 . sugar
1/8 t. salt
2 cups milk
1 tsp. vanilla
Put Bread in casserole,and raisins
Place casserole in pan with 1 inch of water
350 degrees for 50-60 min.  Knife in and comes out clean.
Sauce
2 T. Cornstarch
1/2 c. sugar
2 cup milk
1/4  c. marg.
1/1/2 t. vanilla
2 egg yolks beaten
Combine startch and sugar gradually, add milk heat and stir to thicken simmer 2-3 min. 
Add butter and vanilla, stir. To egg yolks add 1.4 sauce. Cook and stir one min.

Filled Coffee Ring


2  pkg. dry yeast
1/3 c. warm water
1 1/2 c. lukewarm milk
1 cup sugar divided
2 tsp. salt
2 eggs
1/2 c. salad oil
6 1/2 to 71/2 c. all purpose flour
1/4 c. melted butter or marg.
2 T. ground cinamon
3 T. chopped maraschino cherries
3 T. chopped pecans
Cream frosting

Dissolve yeast in warm water, Set aside 5 min.  Combine milk , 1/2 cup sugar and salt, stir in yeast mixture, eggs, and oil.  Add enough flour to make a slightly sticky dough, mix well. Cover and let rise in a warm place free from drafts, until doubled in bulk. About 1 hour. Turn dough out on floured surface and knead until smooth elastic, 5 min.  Return to bowl and let rise again.  Place dough on flour surface.and roll into rectangle.  Spread with melted butter, sugar and cinnamon, cherries, pecans, raisins. Roll up jelly roll fashion. Pinch edges and ends together. place on greased cookie sheet. Using kitchen shears make a cut around the ring at every inch.  Gently pull out and twist.  Cover and let rise til double 30 min.  Bake at 350 degrees for 20- 25 min.  

Creamy Frosting
1 cup shipping cream 1 cup sugar 
1 tsp. almond extract
Microwave on high for 9 min.  Watch carefully, will boil over.
