Cinnamon Rolls
4 cups lukewarm water
3 packages of yeast
1 tablespoon salt
2/3 cup sugar
3 1/2 sticks butter
10-12 cups of unbleached flour
Put lukewarm water in big bowl, sprinkle yeast over water, then add 1 T of salt and 2/3 cup white sugar. Whisk together.
Take softened butter but not too hot. Put in yeast mixture, add 4 cups of flour, Mix with a spoon, then add one cup of flour at a time until dough is no longer sticky, put in oiled bowl, and let double in size.
Punch down place in greased bread pans. You
can make 5 loaves of bread, or 3 loaves of bread and 2- 9 X13 pans of cinnamon rolls. For cinnamon rolls, Roll out dough, butter it spread brown sugar on it and then sprinkle with cinnamon. Roll up and cut with dental floss, Let rise until double, Bake @ 350 degrees for 15-20 minutes
Frosting for Cinnamon Rolls
1/2 stick of butter
1/2 tsp. vanilla
1/4 tsp almond extract
Powdered sugar
Milk
Melt butter, add vanilla, and almond in bowl, add 1 cup powdered sugar, add 1/4 cup milk, Add more pwd. sugar and milk until you get the consistency you want.
Frosting for Pecan Rolls
1 stick butter
brown sugar
cinnamon
1/4 chopped pecans
Mit butter and put in 9 x 13 pan. Spread evenly, then add brown sugar till it is like a paste. Sprinkle with cinnamon and sprinkle chopped pecans on that.
